Chicken Pizza Sliders

 

These chicken pizza sliders are a quick and satisfying bake that brings together all the familiar flavours of pizza in a soft little sandwich. They’re cheesy, saucy, and packed with seasoned chicken, making them perfect for sharing as a snack, party bite, or easy meal.

For our recipe, we have used Devondale Mozzarella – Shredded Cheese provided to us by one of our partners, State Trading Organization (STO). This melts beautifully and gives the sliders that nice cheesy pull that works so well in this recipe.

Yield: 6 sliders

 

Ingredients:

For the Chicken

  • 1 tsp oil
  • 120g diced chicken (cut into 1 to ½ inch)
  • 1/3 tsp salt
  •  ½ tsp ground black pepper
  • ½ tsp chilli flakes

 

For the sliders

  • 6 slider buns
  • 2 tbsp pizza sauce
  • ½ cup Devondale Mozzarella – Shredded Cheese
  • ¼ cup finely diced red and yellow bell pepper
  • 1 tbsp melted unsalted butter
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano

 

Instructions:

  1. Start by making the chicken filling. Heat 1 tsp oil in a small pot or pan for about 30 seconds over high heat. Add 120g diced chicken (cut into 1 to ½ inch), followed by 1/3 tsp salt, ½ tsp ground black pepper, and ½ tsp chilli flakes.
  2. Stir well and cook over medium-high heat for about 3 to 4 minutes or just until the chicken is heated through and well coated in the seasoning. Transfer them to a bowl or plate and shred using your fingers. Set it aside.
  3. Prepare a baking dish (we used an 8x6 inch tray) by lightly greasing the inside with a little butter if needed. Cut the 6 slider buns in half horizontally and place the bottom halves into the dish.
  4. In a small bowl, mix together 1 tbsp melted unsalted butter, ¼ tsp garlic powder, and ¼ tsp dried oregano. Set aside. Preheat the oven to 175°C for 10 minutes.
  5. Spread 2 tbsp pizza sauce evenly over the bottom buns using a spoon or spatula. Then sprinkle over ¼ cup Devondale Mozzarella – Shredded Cheese, followed by ¼ cup finely diced red and yellow bell pepper, the cooked shredded chicken, and finally the remaining ¼ cup Devondale Mozzarella – Shredded Cheese.
  6. Place the top halves of the buns over the filling and brush a generous amount of the butter mixture over the tops. Lightly cover the dish with aluminium foil and bake for 10 minutes. Then remove the foil and bake for another 5 minutes, or until the cheese has melted nicely and the tops are lightly golden.
  7. Remove the tray from the oven and let the sliders rest for at least 5 minutes before serving.
