Chicken Chow Mein

 

Chow mein is a Chinese stir-fry noodles, that is made with vegetables, meat or tofu. It is a super simple dish to make as it doesn’t have any complex steps or ingredients to work with.

For this recipe we have use the PRB Egg Noodles provided to us by one of our partners, S&O (Standard and Origin). These are fine noodles made from only three ingredients; wheat flour, eggs and salt. Unlike most instant noodles, these don’t really have an artificial taste, and will work really well with both stir-fry dishes and soups. The pack is really large, and could probably serve up to 4-5 people.

Ingredients:

For the noodles

  • 200g chicken breast
  • 3 cloves of garlic
  • 1 cup sliced cabbage
  • 1 cup sliced carrot
  • ½ cup sliced bell pepper
  • 2/3 cup sliced green onions (only green parts)
  • 3 green onions (white parts)
  • 4 cups water
  • 200g PRB Egg Noodles (half of the packet)
  • 2 tbsp + 1 tsp olive oil (1 tbsp for frying the chicken, 1 tbsp to sauté the vegetables, and 1 tsp to mix in with noodles)

For the sauce

  • 2 tsp corn flour
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 ½ tsp sesame oil
  • 1 tsp sugar
  • ½ tsp black pepper
  • 2 tbsp water
  • ½ tsp salt
  • 1 ½ tsp chili flakes

 

Instructions:

  1. Defrost the chicken breast and slice it into thin strips. Add to a bowl.
  2. Then in a small bowl, mix all the ingredients for the sauce well together.
  3. Add ½ tbsp of the sauce to the chicken and combine until all the chicken strips are well coated. Set the bowl aside to let it marinate for around 10 minutes.
  4. As for the vegetables, first chop the garlics, and then thinly slice the cabbage, carrot and bell pepper. Then slice the green parts (leaves) of the green onions to pieces of around 2 inches. Take 3 white parts (bulb) of the green onions and thinly slice them up as well.
  5. Next, take a large pot and add in 4 cups of water and bring it to a boil. Once the water is boiling, add the PRB Egg Noodles in and cook for 2 minutes. They become soft quite fast so be careful not to overcook them.
  6. Place the cooked noodles in a plate and add a tsp of olive oil and mix well. This is to keep the noodles from sticking together. Set aside.
  7. Add 1 tbsp of the olive oil to a pan and heat it up. Place in the chicken strips and fry them on medium heat for 5-6 minutes or until golden brown in color. Remove to a plate.
  8. To the same pan, add the last tbsp of the olive oil. Add in the chopped garlic and the white parts of the green onion. Then sauté them on medium heat for 30 seconds.
  9. Add in the carrot, cabbage, bell pepper and continue sautéing for 5 minutes or until the vegetables are soft.
  10. Next, add in the cooked noodles and chicken along with the remaining sauce mixture to the pan. Give it a good mix until everything is combined evenly.
  11. Lastly, add the sliced green parts of the green onions and combine well. They are added last as they cook very quickly, so cook for a minute and remove from heat.
