Cashew Chicken

 

Cashew chicken is among the yummiest of stir-fried dishes. Bite sized chicken cubes, roasted cashews and veggies are coated in a spicy sauce that delivers a good amount of umami.

In our recipe we’ve used Salted Cashew Nuts from the Sri Lankan brand Royal Cashews, which we got from one of our partners ADK General Trading. These nuts are lightly toasted and has a really yummy creamy nutty taste. They are only lightly salted too, making them ideal for this stir fry.

Serves: 2-3

 

Ingredients:

For the marinade

  • 250g boneless chicken
  • 1 tbsp. corn flour
  • ½ tsp. soy sauce

For the stir fry

  • 1 medium onion
  • ½ bell pepper
  • 3 garlic cloves
  • 2 green chillies
  • ¼ cup chopped green onions
  • 5 dried chillies
  • 2 tbsp. olive oil
  • 100g Royal Cashews Salted Cashew Nuts (1 packet)
  • ½ tsp. soy sauce
  • 1 tbsp. oyster sauce
  • ½ tsp. black pepper
  • ¼ tsp. salt
  • 2 tbsp. water

 

Ingredients:

  1. Cut the chicken into ½ inch pieces. Add the chicken to a bowl along with the soy sauce and corn flour. Mix well and let the chicken marinate for 10 minutes.
  2. Chop the onion and bell pepper into small cubes, slice the garlic and green chili, and chop the green onions. Break the dried chillies into roughly 1-inch pieces.
  3. Heat 1 tbsp. oil in a pan on medium heat, and sauté the Royal Cashews Salted Cashew Nuts for 2-3 minutes until crispy and golden brown. Then remove the cashews from the pan and set it aside.
  4. Heat 1 tbsp. oil in the same pan over medium-high heat. Add the marinated chicken pieces and stir fry for 7 minutes or until the chicken is cooked through. Remove the chicken pieces and set it aside.
  5. To the same pan add onions, garlic, bell pepper, green chili and dried chilies. Stir fry for 4 minutes.
  6. Add the chicken pieces, soy sauce, oyster sauce, black pepper, salt and water, combine everything and stir fry for a minute.
  7. Add the cashews, green onion and cook while combining well for another minute and then turn off the heat.
