The Maldivian tea time snack Cake Folhi is exactly like a pancake. However, it’s usually folded down the middle and unlike regular pancakes, are served without any toppings.
1 cup flour
2 ¼ tsp. baking powder
¼ tsp. salt
3 tbsp. sugar
1 tsp. vanilla essence
2 tbsp. melted butter (at room temperature)
¾ cup full cream milk
Sift the flour, baking powder and salt into a large bowl. Add the sugar and give it a good mix.
Add the egg, vanilla essence, butter and milk to another bowl and mix well to get everything combined.
Pour the egg mixture into the flour mixture and mix until you get a smooth batter.
Heat up a pan. You can rub a little bit of oil on the pan using tissue paper to prevent sticking.
Pour 3 tbsp. of the batter to the heated pan. Use the back of your spoon to encourage it into a circular shape.
When you see bubbles forming on top of the batter and when the bottom side is golden brown, fold the ‘folhi’ down the middle. Cook for another half a minute to make sure the inside is cooked and then remove to a plate.
Repeat steps 5 & 6 until you run out of batter. Keep the heat on medium throughout. Too little heat and you won’t get the nice colour on the outside and too much heat will give you burnt outsides and uncooked insides.
