Banana Biscuit Pudding

 

If you love banana and pudding, this is a great treat for when you are craving something sweet!

For our recipe, we have used Maliban Marie Biscuits provided to us by one of our partners, ADK General Trading. These biscuits soften beautifully between the layers while still helping the pudding hold its shape, making them a perfect choice for layered desserts like this.

Ingredients:

  • 3 egg yolks
  • 60 grams granulated sugar
  • 25 grams corn flour
  • ¼ tsp salt
  • 1 ½ cup full cream milk
  • 1 tsp vanilla essence
  • 2 tbsp unsalted butter
  • ½ + 1/3 cup whipping cream
  • ½ cup full cream milk (for dipping the biscuits)
  • 1 pack Maliban Marie Biscuits
  • 4 large bananas (cut into thin slices)

 

 

Instructions:

  1. In a small pot, add 3 egg yolks, 60g granulated sugar, 25g corn flour, and ¼ tsp salt. Whisk until smooth. Add 1½ cups full cream milk and whisk again until well combined.
  2. Place the pot over medium-low heat and cook the mixture, stirring regularly with a spatula, for about 6 to 7 minutes or until it thickens to a pudding-like consistency.
  3. Switch off the heat and add 1 tsp vanilla essence and 2 tbsp unsalted butter. Stir until the butter has melted and the mixture is smooth.
  4. Transfer the pudding mixture to a bowl. Cover the surface directly with cling wrap (so that the cling wrap touches the pudding) and let it cool for about 15 minutes.
  5. While the pudding cools, add ½ + ⅓ cup whipping cream to a separate bowl and whisk for about 9 to 10 minutes, or until stiff peaks form.
  6. Once the pudding has cooled slightly, gently fold the whipped cream into the pudding in batches until fully combined. Set aside.
  7. Pour ½ cup full cream milk into a small bowl or cup for dipping the biscuits.
  8. In an 8-inch x 5-inch tray, spread about ¼ cup of the pudding mixture across the bottom to create the first layer.
  9. Dip each Maliban Marie Biscuit into the milk for about 3 to 4 seconds, then arrange them over the pudding layer. Break additional biscuits as needed to fill any gaps (we used about 6-7 biscuits per layer).
  10. Arrange a layer of the thinly sliced bananas (we used about 24 slices for each layer) over the biscuit layer. Spread about ¾ cup pudding mixture over the banana layer.
  11. Repeat the layers in the following order until all the ingredients are used: pudding, dipped biscuits, bananas. We were able to make 4 layers of each.
  12. Finish with a final layer of pudding. Crush 1 Maliban Marie Biscuits over the top and decorate with a few banana slices.
  13. Chill in the refrigerator until set before serving.
