Baipen | Lonumedhu

Baipen is a bland rice porridge that many Maldivian locals relish for breakfast during Ramadan. It’s best enjoyed with Maskurolhi, a spicy tuna and coconut sambal.

Serves: 2

  • ½ cup rice
  • 4 cups water
  • 6 inches pandan

  1. Wash the rice thoroughly and add it to a pot along with the water and pandan.
  2. Bring to a boil and then turn down the heat and let it simmer for 40 minutes or until the rice is very soft.
  3. Cook for another 5 minutes while using a spoon to mash the rice against the bottom and sides of the pot. The rice should mash easily and the mixture should thicken as you mash.
