Devilled Chicken

 

Spicy & easy, devilled chicken is one of our favourite ways to enjoy chicken.

 

Serves: 5

 

Ingredients:

  • 900 grams curry cut chicken (skin removed)
  • 1 onion
  • 4 garlic cloves
  • ½ inch piece of ginger
  • 3 tomatoes
  • 4 capsicums
  • 15 tbsp. tomato ketchup
  • ½ tbsp. cumin powder
  • 2 tbsp. coriander powder
  • 1 tbsp. fennel powder
  • 2 tsp. red chilli powder (or to taste)
  • 12 tbsp. dark soy sauce
  • 2 thai red chillies (you can use githeyo mirus instead)
  • ½ cup water
  • 1 tsp. sugar
  • 1 tsp. ground black pepper
  • 4 tbsp. oil
  • 1 ½ tsp salt (or to taste)

 

Instructions:

  1. Mix cumin, fennel, coriander, salt, red chilli powder and rub mixture on to the chicken pieces and leave to marinate while you prepare the other ingredients.
  2. Slice the onions, we sliced ours into roughly 1 cm wide pieces.
  3. Cut the tomatoes, each one into 8 pieces, and remember to remove the seeds since otherwise it's going to be too sour.
  4. Slice open the capsicums, remove the seeds, and slice every capsicum half into 3 pieces.
  5. Smash the garlic and ginger using the back of a spoon and cut the thai chillies into small pieces.
  6. Heat the oil in a large pot.
  7. Once the oil is well heated, add the chicken, and cook flipping them occassionally until the chicken loses its raw pinkish colour and takes on a brownish tint.
  8. Add the sliced onions, and once they become transparent add the smashed garlic and ginger, and cook for roughly a minute.
  9. Add the vegetables and thai chillies, stir and cook for around 2 minutes, just to let the vegetables soften a little.
  10. Add the tomato sauce, soy sauce, sugar, chilli powder, pepper and water, stir well to combine.
  11. Cook covered on medium to low heat until the chicken is completed cooked through and the flavours of the sauce are well combined. Should be done in around 15 minutes, and before you switch off remeber to have a taste and make any necessary adjustments.
