Cracker Crumb Fried Chicken

 

When we think of comfort food, one that always comes to mind is fried chicken. These crispy fried chicken strips are so enjoyable to have while watching your favourite show or movie, or even just to eat together with friends and family.

In our recipe we have used Hup Seng Gold Crackers for breading the chicken. They were provided to us by one of our partners, Silver Quest. The Hup Seng Gold Crackers are great for every occasion such as breakfast, teatime, picnic, party night and so on. These crackers are deliciously crispy and goes well with any topping. They gave our crumb crust a great savoury flavour too.

Ingredients:

  • 1 cup crushed Hup Seng Gold Crackers
  • ¼ cup flour
  • 1 egg
  • 1 boneless chicken breast
  • ½ tsp garlic powder
  • ¼ tsp chili powder
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 1 ¼ cup oil

 

Instructions:

  1. Crush Hup Seng Gold Crackers with your hands into crumbs and set aside. It should have some bigger crumbs and smaller crumbs to create a crispier texture. It takes around 15 crackers for 1 cup.
  2. Next, add ¼ cup flour into a new bowl and beat 1 egg in another bowl.
  3. Slice the chicken breast to halves horizontally. Then cut them into strips of about ½ inch wide.
  4. Season the chicken strips with garlic powder, chili powder, salt, and ground black pepper. You can always adjust the spiciness to your liking.
  5. After that, coat the chicken strips in flour first and then dip them in the eggs until fully coated.
  6. Lastly, coat them with the Hup Seng Gold Crackers. Press the crumbs into the chicken strips so that they hold on better.
  7. Add 1 ¼ cup oil into a frying pan and heat it up.
  8. When the oil is heated, start frying the chicken strips in batches on medium heat for 3-4 minutes or until they are golden brown in colour. Add around 4-5 strips each time and flip them halfway through to get an even cook.
  9. Once fried, place the fried chicken strips in a plate covered with paper napkins. This is to get rid of any extra oil, and make the chicken crispier. These crispy fried chicken strips will taste great with a dipping sauce on the side.
